Chilaquiles and molletes There are a few vegetarian dishes that are Mexican regulars that I’ve found I can safely order in many restaurants!
The first is a common Mexican breakfast dish called Chilaquiles. It is made by cutting up old/semi-dried corn tortillas and cooking them in a red sauce with a mild chili (think red enchilada shells only). It is served with many toppings and sides, and I prefer to take mine with some refried beans, salsa a la Mexicana (pico de gallo with tomatoes, onion, cilantro and jalapeno), and some cheese sprinkled on top. Most Mexicans seem to add cream, and often serve this dish with breakfast eggs.
Another easy dish is molletes, which I used to make on occasion growing up. It is simply a long bread roll cut in half, topped with refried beans and cheese, toasted in an oven. Since I think the world is better with salsa a la Mexicana, I dump that all over the top, as well. Cheap, easy, and very filling!
